Paul Day’s culinary experience goes back to London’s Chinatown where he worked as a Chinese butcher and absorbed a vast amount of knowledge concerning the ingredients in South East Asian cooking and how to use the ingredients properly. He also was taught many other Cantonese techniques on how to use a wok and roast a duck properly. After his years of Chinatown experience and working in the kitchen of Mezzo, he went on to become Sous Chef at Nobu Old Park Lane. This knowledge definitely shines through at Sansho where you can sample funky Asian food that will leave a lasting impression on your taste buds. As you enter Sansho you will notice the simple interior decorated with long wooden tables with benches and wall décor featuring Asian pin-up girls from old adverts. The interior is so simple and fresh that one might believe they are in a hip neighborhood of Berlin or some other fashionable city. The comfortable interior is complete with the general overall lovely hospitality of the restaurant staff members who will explain each dish expertly should you have any questions. Paul Day’s restaurant is indeed the talk of the Prague dining scene and it is easy to see why. The restaurant does not have a set menu of entrees, as the menu is based seasonally on the availability of high quality produce and ingredients. Making the most of locally available ingredients from the Vietnamese population in Prague, Chef Paul Day creates magical sample meals that will awaken your senses and make you realize that Sansho is where it’s at in the city of Prague. It is interesting to note that the pork offered at Sansho is sourced from the Sasov Biofarm that is operated by Josef Sklenar. The Presticke prase pork is a heritage Czech breed that is known for its high quality and fantastic taste. We highly recommend ordering a tasting menu for lunch or for dinner to share with your family and friends; you will not be disappointed as each course will leave you longing for more. You can of course, inform the wait staff about any allergies or preferences. It is necessary to make reservations, as Sansho is full night and day due to its enormous popularity.
